This (and the modern notes) template seems to work okay. Is it safe to replace the old
{{Note}} templates?

I don't think anything terrible will happen, so you can replace them if you want.

Template:ModernNote/doc used to mention them...
I think it's wrong to silently remove them...

These parameters no longer exist. There is no need to return what is not there. I got rid of this documentation because it is terrible.
Previously, {{ModernNote}} was used as the basis for all modern notes, but now it is exactly the same template as {{ModernTodo}} and others. Now the basis is {{Notify}} and it has its own documentation.

The nocat= can be useful here as well. See template Notify/inline/doc for example.
